These are the perfect snack or breakfast side, and don’t take too long to make. Of course, I use an air fryer to cook the sweet potatoes. There are only three ingredients in this quick recipe, but they are really filling and simple.
- Sweet potatoes
- Crunchy Almond butter
- I love the almond butters at Wegmans because most of them only contain almonds.
I use a mandoline slicer for the sweet potatoes. It doesn’t matter which way you slice them, but slicing from the side produces more of a boat shape. Set the air fryer at 400ºF for 7-8 minutes. Slice the banana(s) while these are cooking to cut your time. After they are done, spread the crunchy almond butter on top of the fried sweet potatoes. Then, put the banana on top of the crunchy almond butter.
